Description

Chewy, naturally sweet vegan date & walnut flapjacks made with wholesome oats, sticky Medjool dates, crunchy walnuts, and maple syrup. A simple baked snack that is perfect for breakfast, tea time, or an energy boost.


Ingredients

  • 2 cups rolled oats
  • 1 cup Medjool dates, pitted and chopped
  • 3/4 cup walnuts, roughly chopped
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine rolled oats, chopped dates, chopped walnuts, and salt.
  3. In a small saucepan over low heat, gently warm the maple syrup and melted coconut oil together until fully combined. Remove from heat and stir in the vanilla extract.
  4. Pour the warm syrup mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
  5. Transfer the mixture to the prepared pan and press it down firmly with a spatula to create an even layer.
  6. Bake for 20 minutes, or until the edges are lightly golden.
  7. Remove from the oven and allow to cool completely in the pan before slicing into 12 squares.

Notes

  • Press the mixture firmly into the pan to prevent crumbling.
  • Allow the flapjacks to cool fully before slicing for clean edges.
  • Lightly toast the walnuts beforehand for deeper flavor.
  • Store in an airtight container at room temperature for up to 4 days or refrigerate for up to 1 week.
