Chewy, naturally sweet vegan date & walnut flapjacks made with wholesome oats, sticky Medjool dates, crunchy walnuts, and maple syrup. A simple baked snack that is perfect for breakfast, tea time, or an energy boost.

- 2 cups rolled oats
- 1 cup Medjool dates, pitted and chopped
- 3/4 cup walnuts, roughly chopped
- 1/2 cup maple syrup
- 1/3 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large mixing bowl, combine rolled oats, chopped dates, chopped walnuts, and salt.
- In a small saucepan over low heat, gently warm the maple syrup and melted coconut oil together until fully combined. Remove from heat and stir in the vanilla extract.
- Pour the warm syrup mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
- Transfer the mixture to the prepared pan and press it down firmly with a spatula to create an even layer.
- Bake for 20 minutes, or until the edges are lightly golden.
- Remove from the oven and allow to cool completely in the pan before slicing into 12 squares.
Notes
- Press the mixture firmly into the pan to prevent crumbling.
- Allow the flapjacks to cool fully before slicing for clean edges.
- Lightly toast the walnuts beforehand for deeper flavor.
- Store in an airtight container at room temperature for up to 4 days or refrigerate for up to 1 week.
