For the Whipped Feta:

  • 8 oz feta cheese (block, not crumbled)
  • 4 oz cream cheese, softened
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon honey
  • 1 garlic clove, minced (optional)

For the Tomato Topping:

  • 1 ½ cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, minced
  • 1 teaspoon fresh basil, chopped (or ½ teaspoon dried)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Bread:

  • 1 baguette, sliced
  • 2 tablespoons olive oil (for brushing)
  • 1 garlic clove, cut in half (for rubbing)

Instructions

  • Make the Whipped Feta:
    • In a food processor, blend feta, cream cheese, olive oil, lemon juice, honey, and garlic until smooth and creamy.
    • Transfer to a bowl and set aside.
  • Marinate the Tomatoes:
    • In a bowl, toss cherry tomatoes with olive oil, balsamic vinegar, garlic, basil, salt, and pepper.
    • Let sit for at least 15 minutes to absorb the flavors.
  • Prepare the Bread:
    • Preheat oven to 400°F (200°C).
    • Brush baguette slices with olive oil and place on a baking sheet.
    • Bake for 8-10 minutes, flipping halfway, until golden and crisp.
    • While warm, rub the tops lightly with a cut garlic clove for extra flavor.
  • Assemble the Bruschetta:
    • Spread a generous layer of whipped feta on each toasted baguette slice.
    • Top with marinated tomatoes and drizzle with extra balsamic if desired.
  • Serve & Enjoy:
    • Garnish with extra basil leaves or cracked black pepper.
    • Serve immediately and enjoy the perfect blend of creamy, tangy, and crunchy textures!

Notes

  • For extra richness, you can use a bit more cream cheese or add a splash of heavy cream to the whipped feta.
