White Chocolate Brigadeiros are a Brazilian treat made with sweetened condensed milk, white chocolate, and shredded coconut. These creamy, melt-in-your-mouth confections are perfect for any occasion and are easy to make.

- 1 (14 oz) can sweetened condensed milk
- 1 tbsp unsalted butter
- 1 tsp vanilla extract
- 1 cup white chocolate chips
- 2 cups shredded unsweetened coconut

Cook the Mixture:
- In a medium pot, combine the sweetened condensed milk, butter, and vanilla extract. Heat over medium-low, stirring continuously with a spatula.
- Once the mixture is warm, add the white chocolate chips and continue stirring until they are completely melted and integrated.

Thicken the Mixture:
- Continue cooking and stirring for about 15 minutes, or until the mixture thickens. To test if it’s thick enough, scrape the bottom of the pot with a rubber spatula; the mixture should hold its shape for 2-3 seconds before filling back in.

Chill and Shape:
- Transfer the thickened mixture to a greased 8×8-inch baking dish and chill in the refrigerator for 1 hour.
- Place the shredded coconut on a plate.
- Once chilled, scoop about 1 tablespoon of the white chocolate mixture at a time and roll into balls.
- Roll each ball in the shredded coconut to coat.

- Place the coated brigadeiros in an airtight container. Refrigerate for up to 5 days.
Notes
- You can customize the topping by rolling the brigadeiros in other ingredients such as sprinkles, cocoa powder, or crushed nuts.
- The mixture should be thick enough to hold its shape when scooped, so don’t rush the cooking process.
