Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  • Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  • Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
  • Add Wet Ingredients: Mix in the egg, vanilla extract, and peppermint extract until well combined.
  • Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  • Fold in Mix-Ins: Gently fold in the white chocolate chips and crushed peppermint candies.
  • Shape the Cookies: Scoop tablespoon-sized balls of dough and place them on the prepared baking sheets, spacing them about 2 inches apart.
  • Bake the Cookies: Bake for 8–10 minutes, or until the edges are just set and the centers look slightly underbaked (they’ll firm up as they cool).
  • Cool and Serve: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • You can substitute crushed peppermint candies with mini candy canes for a more festive look.
