Description

These classic Whoopie Pies feature a soft, cake-like chocolate cookie filled with a fluffy marshmallow filling. A delightful treat for any occasion, they’re easy to make and irresistible to eat!

For the Cookies:

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 stick butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup milk

For the Filling:

  • 2 sticks butter (softened)
  • 2 1/2 cups confectioners sugar
  • 1 (16 oz) container of marshmallow fluff
  • 2 teaspoons vanilla extract


Instructions

  • Sift Together: In a bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  • Beat Wet Ingredients: In a large mixing bowl, beat together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, and continue mixing.
  • Combine: Add the milk, and then mix in the sifted dry ingredients until just combined. Let the batter rest for 5-10 minutes.
  • Shape Cookies: Drop the batter by a level tablespoon onto a baking sheet. Bake at 375°F for 8 minutes. Let the cookies cool completely.
  • Prepare Filling: In a separate bowl, beat the softened butter and powdered sugar together until smooth. Add the marshmallow fluff and vanilla extract, and mix until fluffy.
  • Assemble Whoopie Pies: Once the cookies have cooled, spread the filling on one cookie and sandwich with another to make a pie.
  • Serve and Enjoy! Makes about 24 pies.

Notes

  • Make sure the cookies are completely cool before filling to prevent the filling from melting.
  • Store the whoopie pies in an airtight container at room temperature for up to 3 days.
