For the Cookies:
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 stick butter (softened)
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup milk
For the Filling:
- 2 sticks butter (softened)
- 2 1/2 cups confectioners sugar
- 1 (16 oz) container of marshmallow fluff
- 2 teaspoons vanilla extract
Instructions
- Sift Together: In a bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
- Beat Wet Ingredients: In a large mixing bowl, beat together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, and continue mixing.
- Combine: Add the milk, and then mix in the sifted dry ingredients until just combined. Let the batter rest for 5-10 minutes.
- Shape Cookies: Drop the batter by a level tablespoon onto a baking sheet. Bake at 375°F for 8 minutes. Let the cookies cool completely.
- Prepare Filling: In a separate bowl, beat the softened butter and powdered sugar together until smooth. Add the marshmallow fluff and vanilla extract, and mix until fluffy.
- Assemble Whoopie Pies: Once the cookies have cooled, spread the filling on one cookie and sandwich with another to make a pie.
- Serve and Enjoy! Makes about 24 pies.
Notes
- Make sure the cookies are completely cool before filling to prevent the filling from melting.
- Store the whoopie pies in an airtight container at room temperature for up to 3 days.
- You can also try adding chocolate chips to the cookie dough for extra texture!
