- 4 salmon fillets (about 6 ounces each), skin-on
- 3 tablespoons za’atar spice blend
- 2 tablespoons olive oil
- 1 large lemon, zested and juiced
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup couscous, cooked (optional side)
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, mix za’atar, olive oil, lemon zest, salt, and pepper to form a paste.
- Place the salmon fillets skin-side down on the prepared baking sheet.
- Rub the za’atar paste generously over the top of each fillet.
- Roast the salmon for 12 to 15 minutes, until it flakes easily with a fork.
- Squeeze fresh lemon juice over the top and sprinkle with parsley.
- Serve warm with couscous or your favorite side dish.
