- 3 tablespoons fresh lemon juice

- In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy.
- Beat in the egg and lemon zest, mixing well.
- Add the baking powder and salt, then gradually incorporate the flour. Mix until a soft dough forms.

- Scoop out 1 tablespoon of dough at a time, rolling it into a ball.
- Place the dough balls on the prepared baking sheet, leaving space between each.
- Bake for 10–12 minutes, or until the edges are set but not browned.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
