These delicate, melt-in-your-mouth lemon cookies are a burst of refreshing citrus goodness! Topped with a tangy lemon glaze, they’re perfect for any occasion or simply as a sweet treat.

Ingredients

  • 1 cup (2 sticks) unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 large egg
  • Zest of one medium lemon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour

For the Lemon Glaze:

  • 2 cups confectioners’ sugar
  • 3 tablespoons fresh lemon juice

Instructions

  • Prepare the Dough:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy.
    • Beat in the egg and lemon zest, mixing well.
    • Add the baking powder and salt, then gradually incorporate the flour. Mix until a soft dough forms.
  • Shape and Bake:
    • Scoop out 1 tablespoon of dough at a time, rolling it into a ball.
    • Place the dough balls on the prepared baking sheet, leaving space between each.
    • Bake for 10–12 minutes, or until the edges are set but not browned.
    • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  • Make the Lemon Glaze:
    • In a small bowl, whisk together the confectioners’ sugar and fresh lemon juice until smooth.
  • Glaze the Cookies:
    • Once the cookies have cooled completely, dip the tops into the lemon glaze or drizzle it over the cookies.
    • Let the glaze set for about 15 minutes before serving.
