Zesty Party Nibbles are crispy phyllo cups filled with taco-seasoned beef, melty cheese, and topped with sour cream, tomatoes, and fresh herbs. Perfect for parties, potlucks, or game nights.

- 1 package taco seasoning mix
- 1 pound lean ground beef
- 1 can (10 oz) chopped tomatoes with green chiles
- 1 box mini phyllo shells (15–30 shells)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup diced fresh tomatoes
- 2 tablespoons chopped cilantro
- 1 tablespoon olive oil
- Pinch of salt
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment.
- In a skillet over medium heat, add olive oil and cook the ground beef until browned. Stir in taco seasoning and chopped tomatoes with green chiles. Simmer until thickened.
- Toast phyllo shells on the baking sheet for 3–5 minutes to crisp them.
- Spoon beef mixture into each shell and top with shredded cheddar cheese.
- Return to oven for 5 minutes or until cheese is melted.
- Remove and top each with a dollop of sour cream, diced tomatoes, and chopped cilantro.
- Serve warm or at room temperature on a platter.
Notes
- Pre-toast phyllo shells to keep them crispy.
- Drain any excess liquid from the beef filling.
- Use a piping bag for neater sour cream placement.
- Prep filling ahead for faster assembly at party time.
