Crispy accordion potatoes baked until golden brown with buttery garlic seasoning, parmesan cheese, and fresh parsley. A fun and impressive potato side dish perfect for sharing.


Ingredients

  • 4 medium russet potatoes
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup parmesan cheese, grated
  • 1/2 cup creamy garlic sauce


Instructions

  1. Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a bowl, combine melted butter, olive oil, garlic powder, paprika, salt, and black pepper.
  3. Carefully slice the potatoes into thin accordion-style cuts without cutting all the way through.
  4. Brush the seasoned butter mixture generously between the potato layers and place the potatoes on the baking sheet.
  5. Bake for 50 to 60 minutes, brushing with extra butter halfway through, until crispy and golden brown.
  6. Sprinkle with parmesan cheese and fresh parsley immediately after baking.
  7. Serve hot with creamy garlic sauce.
