Tender chicken simmered in a rich and creamy tomato butter sauce infused with warm Indian spices for a comforting restaurant-style meal at home.


Ingredients

  • 2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter
  • 1 medium onion, finely diced
  • 2 cups tomato sauce
  • 1 cup heavy cream
  • 1 tablespoon brown sugar
  • 2 tablespoons fresh cilantro, chopped


Instructions

  1. Combine the chicken, yogurt, lemon juice, garlic, ginger, garam masala, cumin, paprika, and salt in a bowl. Marinate for at least 30 minutes.
  2. Melt the butter in a large skillet or Dutch oven over medium heat.
  3. Add the diced onion and cook until softened.
  4. Add the marinated chicken and cook for 8 to 10 minutes until mostly cooked through.
  5. Stir in the tomato sauce and brown sugar.
  6. Simmer for 15 minutes, stirring occasionally.
  7. Reduce the heat and stir in the heavy cream.
  8. Simmer for 5 more minutes until smooth and creamy.
  9. Taste and adjust seasoning if needed.
  10. Garnish with fresh cilantro and serve hot with rice or naan.

  • Marinating the chicken improves tenderness and flavor.
  • Use fresh ginger and garlic for the best results.
  • Do not boil the cream vigorously after adding it.
