Soft and chewy homemade pretzel bites stuffed with gooey cheddar cheese, baked until golden brown and served with creamy cheese sauce for dipping.

- 1 1/2 cups warm water
- 2 1/4 teaspoons active dry yeast
- 1 tablespoon brown sugar
- 4 cups all purpose flour
- 1 teaspoon salt
- 4 tablespoons unsalted butter, melted
- 6 ounces cheddar cheese cubes
- 1/3 cup baking soda
- 1 large egg, beaten
- 2 tablespoons coarse pretzel salt
- 1 cup cheese sauce
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- In a large bowl, combine warm water, yeast, and brown sugar. Let sit for 5 minutes until foamy.
- Add flour, salt, and melted butter. Knead until smooth and elastic.
- Bring a large pot of water to a gentle boil and stir in baking soda.
- Divide dough into ropes and cut into small pieces. Flatten each piece and wrap around cheddar cubes, sealing tightly.
- Drop bites into the baking soda bath for 20 seconds and transfer to baking sheet.
- Brush with beaten egg and sprinkle with coarse pretzel salt.
- Bake for 12 to 15 minutes until golden brown.
- Brush warm pretzel bites with melted butter and serve with cheese sauce.
Notes
- Chill cheese cubes slightly before wrapping to reduce leaking.
- Reheat leftovers in the oven for the best texture.
- Use freshly shredded cheddar for richer flavor.
