Description

Soft and chewy homemade pretzel bites stuffed with gooey cheddar cheese, baked until golden brown and served with creamy cheese sauce for dipping.


Ingredients

  • 1 1/2 cups warm water
  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon brown sugar
  • 4 cups all purpose flour
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • 6 ounces cheddar cheese cubes
  • 1/3 cup baking soda
  • 1 large egg, beaten
  • 2 tablespoons coarse pretzel salt
  • 1 cup cheese sauce


Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine warm water, yeast, and brown sugar. Let sit for 5 minutes until foamy.
  3. Add flour, salt, and melted butter. Knead until smooth and elastic.
  4. Bring a large pot of water to a gentle boil and stir in baking soda.
  5. Divide dough into ropes and cut into small pieces. Flatten each piece and wrap around cheddar cubes, sealing tightly.
  6. Drop bites into the baking soda bath for 20 seconds and transfer to baking sheet.
  7. Brush with beaten egg and sprinkle with coarse pretzel salt.
  8. Bake for 12 to 15 minutes until golden brown.
  9. Brush warm pretzel bites with melted butter and serve with cheese sauce.

Notes

  • Chill cheese cubes slightly before wrapping to reduce leaking.
  • Reheat leftovers in the oven for the best texture.
  • Use freshly shredded cheddar for richer flavor.
