This sweet and savory corn pudding casserole is rich, creamy, and packed with delicious corn flavor. It’s the perfect side dish for holidays, BBQs, or any comforting meal.

Ingredients

  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can cream-style corn
  • 1 cup sour cream
  • ½ cup unsalted butter, melted
  • 2 large eggs, beaten
  • 1 (8.5 oz) box Jiffy corn muffin mix
  • ¼ cup granulated sugar (optional, for a sweeter version)
  • ½ tsp salt
  • ½ cup shredded cheddar cheese (optional)

Instructions

  • Preheat & Prep:
    Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  • Mix the Batter:
    In a large bowl, whisk together eggs, sour cream, melted butter, and sugar (if using). Stir in the whole corn, creamed corn, Jiffy mix, salt, and cheddar cheese (if using). Mix until well combined.

  • Bake the Casserole:
    Pour the batter into the prepared baking dish and spread evenly. Bake for 40-50 minutes, or until golden brown and the center is set. A toothpick inserted should come out clean.

  • Serve & Enjoy:
