Ingredients

- 1.5 pounds potatoes, cut into cubes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 tablespoons parsley, chopped
Instructions
- Preheat oven to 425°F.
- Parboil potatoes until slightly tender.
- Drain and dry thoroughly.
- Toss with oil and seasoning.
- Spread on baking tray.
- Roast for 25 to 30 minutes.
- Flip halfway through cooking.
- Sprinkle parsley and serve.
Notes
- Dry potatoes well before roasting
- Do not overcrowd tray
- Use high heat for crispiness
