- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/4 cup maple syrup for serving
- 1/2 cup fresh berries for serving
Instructions
- Heat a nonstick skillet or griddle over medium heat.
- In a mixing bowl, whisk together all-purpose flour, sugar, baking powder, and salt.
- Add milk, egg, melted butter, and vanilla extract, then stir gently until just combined.
- Lightly grease the skillet with butter or oil.
- Spoon or squeeze small circles of batter onto the skillet, leaving space between each pancake.
- Cook until bubbles form on top, then flip gently.
- Cook for another 1 to 2 minutes until golden and cooked through.
- Transfer to a plate and serve warm with maple syrup and fresh berries.
Notes
- Do not overmix the batter because a few small lumps help keep the pancakes fluffy.
- Use medium heat so the pancakes cook evenly without burning.
- A squeeze bottle makes evenly sized mini pancakes easier.
- Freeze leftovers in layers separated by parchment paper for quick breakfasts.
