Soft, fluffy, bite-sized pancakes made with simple pantry ingredients and served with maple syrup and fresh berries. These easy mini pancakes are perfect for breakfast, brunch boards, snacks, and make-ahead mornings.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup for serving
  • 1/2 cup fresh berries for serving


Instructions

  1. Heat a nonstick skillet or griddle over medium heat.
  2. In a mixing bowl, whisk together all-purpose flour, sugar, baking powder, and salt.
  3. Add milk, egg, melted butter, and vanilla extract, then stir gently until just combined.
  4. Lightly grease the skillet with butter or oil.
  5. Spoon or squeeze small circles of batter onto the skillet, leaving space between each pancake.
  6. Cook until bubbles form on top, then flip gently.
  7. Cook for another 1 to 2 minutes until golden and cooked through.
  8. Transfer to a plate and serve warm with maple syrup and fresh berries.

Notes

  • Do not overmix the batter because a few small lumps help keep the pancakes fluffy.
