  • 1 pound boneless, skinless sirloin steak, cut into 1-inch pieces
  • 1 tablespoon olive oil (for steak)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup butter
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound small potatoes, peeled and quartered
  • 1 tablespoon olive oil (for potatoes)

Instructions

  • Season the steak: In a bowl, toss the steak pieces with salt and black pepper.
  • Cook the steak: Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the steak and cook for 5-7 minutes, turning occasionally, until browned on all sides. Remove the steak from the skillet and set it aside.
  • Sauté the vegetables: Add the chopped onion and minced garlic to the skillet. Cook for about 5 minutes, until softened.
  • Make the garlic butter: Add butter, chopped parsley, and dried thyme to the skillet. Cook and stir until the butter is melted and fragrant.
  • Cook the potatoes: Add the quartered potatoes to the skillet and toss them in the garlic butter. Cook for 10-15 minutes, until the potatoes are tender and golden brown, stirring occasionally to ensure even cooking.
  • Combine and serve: Return the cooked steak to the skillet and toss everything to coat the steak and potatoes in the garlic butter. Cook for an additional 2-3 minutes to heat everything through. Serve immediately.

Notes

  • You can add a little extra butter or oil if needed while cooking the potatoes to ensure they cook evenly.
  • For extra flavor, sprinkle a bit of freshly grated Parmesan cheese over the potatoes just before serving.
