Description

This Garlic Lemon Pepper Rice is the ultimate quick-fix comfort food—fluffy rice kissed with golden garlic, fresh lemon, and a crackle of black pepper. Bright, savory, and full of flavor in just 20 minutes.

Ingredients

  • Cooked Rice: 3 cups (preferably day-old)
  • Olive Oil: 2 tablespoons
  • Garlic Cloves: 4 (minced)
  • Lemon Juice: 2 tablespoons (freshly squeezed)
  • Lemon Zest: 1 teaspoon
  • Freshly Cracked Black Pepper: 1 teaspoon (adjust to taste)
  • Salt: 1/2 teaspoon
  • Fresh Parsley: 2 tablespoons (chopped, optional)

Instructions

  1. Preheat Your Equipment: Heat olive oil in a large skillet over medium heat.
  2. Combine Ingredients: Add minced garlic and sauté for 1–2 minutes until golden and fragrant, not browned.
  3. Prepare Your Cooking Vessel: If rice is cold, break it apart gently with your hands or a fork before adding.
  4. Assemble the Dish: Stir in the rice and mix well, coating each grain with garlicky oil. Cook for 3–5 minutes, stirring occasionally.
  5. Cook to Perfection: Add lemon zest, salt, and freshly cracked pepper. Stir to distribute evenly and cook for another minute.
  6. Finishing Touches: Remove from heat and immediately stir in fresh lemon juice and chopped parsley if using.
  7. Serve and Enjoy: Fluff with a fork, taste for seasoning, and serve hot or warm.

Notes

  • Use day-old rice for best texture.
  • Don’t let garlic brown—it can become bitter.
  • Freshly squeezed lemon juice makes a big difference.
  • Add veggies or protein for a complete meal.
