Ingredients

Scale
  • 400 grams chicken breast diced
  • 250 grams gluten-free noodles
  • 2 medium carrots sliced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 3 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley chopped


Instructions

  1. Heat a large skillet over medium heat.
  2. Add olive oil and cook onion and garlic until fragrant.
  3. Add chicken and cook until lightly browned.
  4. Stir in carrots and seasonings.
  5. Add noodles and chicken broth.
  6. Cover and simmer for 15 minutes until noodles are tender.
  7. Stir in parsley and serve warm.

Notes

  • Stir occasionally to prevent sticking
  • Add broth gradually if needed
  • Adjust seasoning before serving
