- 400 grams chicken breast diced
- 250 grams gluten-free noodles
- 2 medium carrots sliced
- 1 medium onion chopped
- 3 cloves garlic minced
- 3 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 tablespoons fresh parsley chopped
Instructions
- Heat a large skillet over medium heat.
- Add olive oil and cook onion and garlic until fragrant.
- Add chicken and cook until lightly browned.
- Stir in carrots and seasonings.
- Add noodles and chicken broth.
- Cover and simmer for 15 minutes until noodles are tender.
- Stir in parsley and serve warm.
