- 2 lbs boneless chicken thighs, cut into 1-inch pieces
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup honey
- 1/2 cup barbecue sauce
Instructions
- Heat oil in a heavy pot to 350°F and prepare a wire rack with paper towels.
- Soak chicken in buttermilk. In a separate bowl, combine flour, paprika, garlic powder, onion powder, salt, and pepper.
- Remove chicken from buttermilk, dredge in flour mixture. For extra crispiness, double-dip in buttermilk and flour again.
- Fry chicken in batches for 5–6 minutes until golden and cooked through. Transfer to paper towel-lined rack.
- In a small saucepan, warm honey and barbecue sauce until combined and glossy.
- Toss fried chicken bites in warm sauce until fully coated.
- Serve hot, garnished with chopped herbs if desired.

- Rest breaded chicken 10 minutes before frying to enhance crispiness.
- Use a thermometer to maintain oil temperature while frying.
