- 1 1/2 pounds boneless skinless chicken thighs
- 1/3 cup honey
- 2 chipotle peppers plus 2 tablespoons adobo sauce
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 fresh lime, cut into wedges
- 2 tablespoons fresh cilantro, chopped
Instructions
- Heat a large skillet over medium heat.
- Whisk together honey, chopped chipotle peppers, adobo sauce, garlic, paprika, cumin, chili powder, salt, and black pepper.
- Add olive oil to the skillet and place chicken thighs into the hot pan.
- Cook chicken for 5 to 6 minutes per side until golden brown.
- Add butter and pour the honey chipotle glaze into the skillet.
- Reduce heat slightly and cook for another 3 to 4 minutes while spooning glaze over the chicken.
- Squeeze fresh lime juice over the chicken and sprinkle cilantro on top.
- Serve warm with extra glaze spooned over the chicken.
Notes
- Pat chicken dry before cooking for better searing.
- Do not cook the glaze over very high heat because honey burns quickly.
- Marinate the chicken for 30 minutes for deeper flavor.
- Serve immediately while the glaze stays sticky and glossy.
