Juicy honey chipotle chicken coated in a sticky sweet and smoky glaze with caramelized edges and bold flavor. Perfect for quick dinners, tacos, rice bowls, or meal prep.


Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1/3 cup honey
  • 2 chipotle peppers plus 2 tablespoons adobo sauce
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 fresh lime, cut into wedges
  • 2 tablespoons fresh cilantro, chopped


Instructions

  1. Heat a large skillet over medium heat.
  2. Whisk together honey, chopped chipotle peppers, adobo sauce, garlic, paprika, cumin, chili powder, salt, and black pepper.
  3. Add olive oil to the skillet and place chicken thighs into the hot pan.
  4. Cook chicken for 5 to 6 minutes per side until golden brown.
  5. Add butter and pour the honey chipotle glaze into the skillet.
  6. Reduce heat slightly and cook for another 3 to 4 minutes while spooning glaze over the chicken.
  7. Squeeze fresh lime juice over the chicken and sprinkle cilantro on top.
  8. Serve warm with extra glaze spooned over the chicken.

Notes

  • Pat chicken dry before cooking for better searing.
  • Do not cook the glaze over very high heat because honey burns quickly.
  • Marinate the chicken for 30 minutes for deeper flavor.
  • Serve immediately while the glaze stays sticky and glossy.
