- 1½ pounds baby potatoes, halved and hollowed
- 2 tablespoons olive oil
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ¼ cup finely chopped green onions or chives
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, mix shredded cheese, salt, pepper, and half the chopped chives.
- Slice potatoes in half, scoop out centers, and place cut-side up on baking sheet.
- Brush each potato with olive oil, then fill with the cheese mixture.
- Bake for 20 to 25 minutes until crispy and cheese is melted.
- Remove from oven and top each bite with a dollop of sour cream and remaining chives.
- Serve warm and enjoy immediately.
Notes
- Use room temperature sour cream for best texture contrast.
