Description

Golden, crispy loaded potato bites filled with cheddar cheese, topped with sour cream and chives — the ultimate crowd-pleasing appetizer or snack.


Ingredients

  • pounds baby potatoes, halved and hollowed
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup finely chopped green onions or chives
  • ½ teaspoon salt
  • ¼ teaspoon black pepper


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix shredded cheese, salt, pepper, and half the chopped chives.
  3. Slice potatoes in half, scoop out centers, and place cut-side up on baking sheet.
  4. Brush each potato with olive oil, then fill with the cheese mixture.
  5. Bake for 20 to 25 minutes until crispy and cheese is melted.
  6. Remove from oven and top each bite with a dollop of sour cream and remaining chives.
  7. Serve warm and enjoy immediately.

Notes

  • Use room temperature sour cream for best texture contrast.
