Ingredients
- 1 cup (226g) unsalted butter, softened
- ½ cup (100g) powdered sugar
- 1 teaspoon vanilla extract
- 1 ¾ cups (220g) all-purpose flour
- ¼ cup (30g) cornstarch
- ¼ teaspoon salt
- Optional: Granulated sugar for coating

Prepare the Dough:
In a bowl, beat the softened butter and powdered sugar until light and fluffy. Add the vanilla extract and mix until well combined. -
Mix Dry Ingredients:
Sift together the flour, cornstarch, and salt. Gradually add this mixture to the butter mixture and mix until a soft dough forms. -
Chill the Dough:
Shape the dough into a log, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes. -
Slice & Bake:
Preheat the oven to 325°F (160°C). Slice the chilled dough into ½-inch rounds and place them on a lined baking sheet. Optionally, sprinkle with granulated sugar for a sweet touch. Bake for 12–15 minutes, or until the edges are slightly golden.
Notes
- These cookies are best stored in an airtight container for up to a week.
- You can roll the dough log in granulated sugar before slicing for extra sweetness and crunch.
