Ingredients

Scale
  • 4 large flour tortillas
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup refried beans
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1/4 cup sour cream (optional for serving)
  • 2 tbsp vegetable oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat, add taco seasoning and water, and simmer for 5 minutes.
  3. Lightly brush tortillas with vegetable oil and bake on a sheet for 3-4 minutes per side until crispy.
  4. Spread a thin layer of refried beans on two tortillas, then top with the seasoned beef.
  5. Place another tortilla on top of each and spread salsa over the surface.
  6. Sprinkle with shredded cheese, diced tomatoes, black olives, and green onions.
  7. Bake for 8-10 minutes until cheese is melted and bubbly.
  8. Slice and serve with sour cream if desired.

Notes

  • Use corn tortillas for a crunchier texture.
  • Add jalapeños for a spicy kick.
  • Make it vegetarian by swapping beef for sautéed veggies or black beans.
