These Molasses Crackle Cookies are perfectly spiced with ginger, cinnamon, and cloves, and have a crisp crackled top with a soft, chewy center. With a rich molasses flavor and a hint of sweetness, they are a delightful treat for any occasion.

Ingredients

  • 1 cup canola oil
  • 2 1/4 cups granulated sugar, divided
  • 1/3 cup molasses
  • 1 egg
  • 3 2/3 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1 tablespoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves

Instructions

  • Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
  • Cream together canola oil and 1 3/4 cups of sugar in a large bowl.
  • Add molasses and egg, mixing until blended.
  • In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, and cloves.
  • Gradually add the dry ingredients to the molasses mixture, mixing until just combined.
  • Place the remaining 1/2 cup of sugar in a small bowl. Shape dough into balls using a 2-tablespoon scoop, then roll each ball in the sugar.
  • Place cookies on baking sheets, spaced at least 2 inches apart.
  • Bake for 10 to 12 minutes, until cookies are golden brown and slightly cracked on top.

Notes

  • Be sure to not overbake the cookies, as they will continue to cook slightly on the baking sheet.
  • These cookies are best enjoyed when slightly cooled to allow the crackle to set.
  • You can store the cookies in an airtight container for up to a week.
