- 1 cup canola oil
- 2 1/4 cups granulated sugar, divided
- 1/3 cup molasses
- 1 egg
- 3 2/3 cups all-purpose flour
- 1 tablespoon baking soda
- 1 tablespoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
Instructions
- Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
- Cream together canola oil and 1 3/4 cups of sugar in a large bowl.
- Add molasses and egg, mixing until blended.
- In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, and cloves.
- Gradually add the dry ingredients to the molasses mixture, mixing until just combined.
- Place the remaining 1/2 cup of sugar in a small bowl. Shape dough into balls using a 2-tablespoon scoop, then roll each ball in the sugar.
- Place cookies on baking sheets, spaced at least 2 inches apart.
- Bake for 10 to 12 minutes, until cookies are golden brown and slightly cracked on top.
Notes
- Be sure to not overbake the cookies, as they will continue to cook slightly on the baking sheet.
- These cookies are best enjoyed when slightly cooled to allow the crackle to set.
- You can store the cookies in an airtight container for up to a week.
