- 1 1/2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
- 4 cups cooked jasmine rice
- 3/4 cup chopped roasted peanuts
- 1/4 cup soy sauce
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 3 green onions, sliced
- 1/2 teaspoon black pepper
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions
- Heat a large skillet over medium-high heat.
- In a bowl, whisk together soy sauce, honey, garlic, ginger, sesame oil, cornstarch, water, and black pepper.
- Add vegetable oil to the skillet and heat until shimmering.
- Add chicken pieces in batches and cook until golden brown and fully cooked.
- Pour the sauce into the skillet and simmer for 2 to 3 minutes until lightly thickened.
- Stir in roasted peanuts and half of the green onions.
- Spoon the chicken mixture over warm jasmine rice.
- Garnish with remaining green onions and extra peanuts before serving.

- Freshly cooked warm rice gives the best texture.
