Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 4 cups cooked jasmine rice
  • 3/4 cup chopped roasted peanuts
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 3 green onions, sliced
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 1/4 cup water


Instructions

  1. Heat a large skillet over medium-high heat.
  2. In a bowl, whisk together soy sauce, honey, garlic, ginger, sesame oil, cornstarch, water, and black pepper.
  3. Add vegetable oil to the skillet and heat until shimmering.
  4. Add chicken pieces in batches and cook until golden brown and fully cooked.
  5. Pour the sauce into the skillet and simmer for 2 to 3 minutes until lightly thickened.
  6. Stir in roasted peanuts and half of the green onions.
  7. Spoon the chicken mixture over warm jasmine rice.
  8. Garnish with remaining green onions and extra peanuts before serving.

Notes

  • Toast the peanuts before adding for deeper flavor.
  • Freshly cooked warm rice gives the best texture.
  • Add chili flakes for a spicy variation.
