Description

A sweet and savory tropical dish that combines tender chicken, juicy pineapple, and a flavorful sauce served over rice. Perfect for a quick weeknight meal with a tropical twist!

Ingredients

Scale

For the Chicken and Sauce:

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon olive oil
  • ½ onion, chopped
  • 1 can (15 oz) pineapple chunks, drained
  • ¼ cup soy sauce
  • ¼ cup honey
  • ¼ cup rice vinegar
  • 1 clove garlic, minced
  • ¼ teaspoon red pepper flakes (optional, for spice)

For Serving:

  • 2 cups cooked rice

Instructions

  • Cook the Chicken
In a large skillet, heat olive oil over medium-high heat. Add chicken slices and cook until browned. Remove the chicken from the skillet and set aside.
  • Sauté the Onion
In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes.
  • Add Pineapple and Sauce Ingredients
Stir in pineapple chunks, soy sauce, honey, rice vinegar, minced garlic, and red pepper flakes (if using). Let the mixture simmer for a few minutes to combine the flavors.
  • Combine the Chicken and Sauce
Return the cooked chicken to the skillet and toss everything together, making sure the chicken is well coated with the sauce.
  • Serve
Serve the pineapple chicken mixture over cooked rice. Enjoy your tropical twist on chicken!

Notes

  • For a spicier dish, add more red pepper flakes or a bit of hot sauce.
  • This dish pairs well with a side salad or steamed vegetables for a complete meal.
