- 1 cup sliced cucumber
- 1 large avocado, sliced
- 1 cup shredded carrots
- 3 tablespoons soy sauce

- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 3 tablespoons sliced green onions
- 1 tablespoon sesame seeds
Instructions
- Preheat oven to 400°F (205°C).
- Whisk together soy sauce, sesame oil, rice vinegar, and honey.
- Line a baking sheet with parchment paper.
- Place salmon pieces on the baking sheet and brush with half the sauce.
- Bake for 12 to 15 minutes until salmon flakes easily.
- Divide rice among four bowls.
- Arrange salmon, cucumber, avocado, and carrots over the rice.
- Drizzle with remaining sauce.
- Garnish with green onions and sesame seeds.
- Serve immediately.
