- 1 lb (450g) minced beef or lamb
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili flakes (optional)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated cheddar cheese
- 2 sheets puff pastry, thawed
- 1 egg, beaten (for egg wash)
- Sesame seeds or nigella seeds, for topping (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Add chopped onion and cook until soft, about 3 minutes.
- Add minced meat and cook until browned, breaking it apart with a spatula.
- Stir in garlic, paprika, cumin, salt, pepper, and chili flakes. Cook for another 2 minutes, then remove from heat and let the mixture cool slightly.
- Mix in shredded mozzarella and cheddar cheeses with the cooled meat mixture.
- Roll out the puff pastry sheets and cut them into squares or rectangles.
- Place a spoonful of meat-cheese filling in the center of each square, fold over into a triangle or rectangle, and seal edges with a fork.
- Brush the tops with beaten egg and sprinkle with sesame or nigella seeds if desired.
- Bake for 18–20 minutes, or until pastries are puffed and golden brown.
- Serve warm and enjoy!

- Ensure the meat filling is cooled before adding to the pastry to prevent sogginess.
- You can use puff pastry circles and fold them into half-moon shapes for a different look.
- These pastries can be prepared ahead and frozen before baking—just bake from frozen, adding a few extra minutes.
