A deliciously gooey and indulgent treat combining cookie dough, graham cracker crumbs, mini marshmallows, and melted chocolate. These s’mores-inspired bars are baked to perfection and topped with a chocolate drizzle for an irresistible dessert.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup mini chocolate chips
  • 1 cup graham cracker crumbs
  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips, melted

Instructions

  • Preheat the Oven:
    Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  • Make the Cookie Dough:
    In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add Dry Ingredients:
    Add the flour, baking soda, and salt to the mixture and stir until well combined.
  • Fold in Mix-ins:
    Fold in the mini chocolate chips and graham cracker crumbs.
  • Layer the Dough:
    Press half of the dough into the bottom of the prepared baking pan, spreading it evenly.
    Sprinkle the mini marshmallows over the dough layer.
  • Top with Remaining Dough:
    Gently spread the remaining cookie dough on top of the marshmallows.
  • Bake:
    Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
  • Cool and Drizzle:
    Allow the bars to cool completely in the pan.
    Drizzle the melted chocolate over the cooled bars and let it set.
  • Serve:
    Cut into squares and serve.

Notes

  • Storage: Store these bars in an airtight container at room temperature for up to 5 days.
  • Add-ins: For extra flavor, you can add chopped nuts or use milk chocolate chips instead of semi-sweet.
  • No-Graham Cracker Option: If you don’t have graham cracker crumbs, crushed up digestive biscuits can be a good substitute.
