  • 1 package pre-made pie crusts (or homemade pie dough)
  • 1 egg (beaten, for egg wash)

For the Filling:

  • 1 cup fresh strawberries (diced)
  • 2 tbsp ruby orange juice
  • 1 tbsp orange zest
  • 3 tbsp granulated sugar (adjust to taste)
  • 1 tbsp cornstarch

For the Glaze:

  • 1 cup powdered sugar
  • 23 tbsp ruby orange juice (adjust for consistency)
  • ½ tsp vanilla extract
  • Pink or red food coloring (optional)
  • Sprinkles or sanding sugar (optional)

Instructions

  • Prepare the Filling:
    • In a small saucepan over medium heat, combine diced strawberries, ruby orange juice, orange zest, sugar, and cornstarch.
    • Cook while stirring until the mixture thickens, about 5 minutes. Remove from heat and let it cool completely.
  • Prepare the Dough:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • Roll out the pie crusts on a floured surface and use a heart-shaped cookie cutter to cut out an even number of hearts.
  • Assemble the Hand Pies:
    • Place half of the heart-shaped dough pieces onto the prepared baking sheet.
    • Spoon about 1-2 tablespoons of the strawberry-ruby orange filling into the center of each heart, leaving a small border around the edges.
    • Brush the edges of the hearts with egg wash. Place another heart-shaped dough piece on top and press the edges together to seal.
    • Use a fork to crimp the edges for a decorative finish.
  • Bake the Hand Pies:
    • Brush the tops of the pies with egg wash and use a small knife to make a tiny slit for steam to escape.
    • Bake for 12-15 minutes, or until golden brown.
    • Remove from the oven and let cool completely on a wire rack.
  • Make the Glaze:
    • In a small bowl, whisk together powdered sugar, ruby orange juice, and vanilla extract until smooth. Add a drop of food coloring for a festive hue, if desired.
  • Glaze the Pies:
    • Once the pies are completely cooled, drizzle or brush the glaze over the tops.
    • Sprinkle with sanding sugar or festive sprinkles for extra flair.

  • The filling can be made ahead of time and stored in the fridge until ready to use.
  • If you prefer, you can use a homemade pie crust instead of pre-made for a fresher taste.
  • Store any leftovers in an airtight container at room temperature for up to 2 days.
