- 3 tbsp granulated sugar (adjust to taste)
- 1 tbsp cornstarch
For the Glaze:
- 1 cup powdered sugar
- 2-3 tbsp ruby orange juice (adjust for consistency)
- ½ tsp vanilla extract
- Pink or red food coloring (optional)
- Sprinkles or sanding sugar (optional)

Prepare the Filling:
- In a small saucepan over medium heat, combine diced strawberries, ruby orange juice, orange zest, sugar, and cornstarch.
- Cook while stirring until the mixture thickens, about 5 minutes. Remove from heat and let it cool completely.

Prepare the Dough:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the pie crusts on a floured surface and use a heart-shaped cookie cutter to cut out an even number of hearts.

Assemble the Hand Pies:
- Place half of the heart-shaped dough pieces onto the prepared baking sheet.
- Spoon about 1-2 tablespoons of the strawberry-ruby orange filling into the center of each heart, leaving a small border around the edges.
- Brush the edges of the hearts with egg wash. Place another heart-shaped dough piece on top and press the edges together to seal.
- Use a fork to crimp the edges for a decorative finish.

Bake the Hand Pies:
- Brush the tops of the pies with egg wash and use a small knife to make a tiny slit for steam to escape.
- Bake for 12-15 minutes, or until golden brown.
- Remove from the oven and let cool completely on a wire rack.

- In a small bowl, whisk together powdered sugar, ruby orange juice, and vanilla extract until smooth. Add a drop of food coloring for a festive hue, if desired.
