A moist and flavorful banana bread enhanced with creamy tahini for a rich, nutty twist on a classic favorite.


Ingredients

Scale
  • 3 large ripe bananas, mashed
  • 1/3 cup tahini
  • 2 large eggs
  • 1/3 cup maple syrup
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk mashed bananas, tahini, eggs, maple syrup, and vanilla until smooth.
  3. In another bowl combine flour, baking soda, and salt.
  4. Fold dry ingredients into wet ingredients until just combined.
  5. Transfer batter to prepared loaf pan.
  6. Bake for 50 to 55 minutes.
  7. Cool in pan for 10 minutes.
  8. Transfer to a cooling rack and cool completely before slicing.

Notes

  • Use very ripe bananas for best flavor.
  • Do not overmix the batter.
  • Store covered for several days.
  • Freeze individual slices for longer storage.
