Description

Chewy, vibrant purple cookies made with rich ube extract and gooey marshmallow centers. These playful yet cozy cookies are a colorful twist on a classic, perfect for any sweet tooth craving.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tablespoon ube extract
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mini marshmallows


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, cream the butter with both sugars until light and fluffy. Add eggs, ube extract, and vanilla extract. Mix well.
  4. Gradually add dry ingredients into wet ingredients. Stir until dough forms.
  5. Gently fold in mini marshmallows using a spatula.
  6. Scoop dough into balls and place on the baking sheet, 2 inches apart.
  7. Bake for 10–12 minutes or until edges are set and centers are puffed.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Chop jumbo marshmallows if needed for even melting.
  • Use room-temperature butter for smooth dough.
  • Do not overbake for the best gooey center.
  • Dough can be frozen and baked later.
