Instructions

  • Prepare the Rice Mixture:
    • In a large bowl, combine the cooled rice, chopped crawfish tails, shredded mozzarella, chopped green onions, and Cajun seasoning. Mix thoroughly until well combined.
  • Form the Balls:
    • Using your hands, shape the rice mixture into balls, about the size of a golf ball. Place them on a baking sheet lined with parchment paper.
    • Once all balls are formed, place the baking sheet in the freezer for about 20 minutes to firm up.
  • Prepare the Coating:
    • Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with crushed Voodoo chips.
  • Coat the Balls:
    • Remove the rice balls from the freezer.
    • Dredge each ball in flour, shaking off excess.
    • Dip into the beaten eggs, allowing excess to drip off.
    • Roll in crushed Voodoo chips, pressing gently to adhere.
  • Fry the Balls:
    • In a deep fryer or large pot, heat oil to 350°F (175°C).
    • Fry the coated balls in batches, avoiding overcrowding, until golden brown and crispy, about 3-4 minutes per batch.
    • Use a slotted spoon to transfer the fried balls to a paper towel-lined plate to drain excess oil.
