Ingredients
Scale
- 6 cups seedless watermelon, cut into 1 inch cubes
- 1 cup crumbled feta cheese
- 1 cup thinly sliced cucumber
- 1/4 cup very thinly sliced red onion
- 1/3 cup fresh mint leaves, lightly torn
- 2 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon honey
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon freshly cracked black pepper
Instructions
- Chill the serving bowl for 10 minutes if desired.
- Add the watermelon, cucumber, red onion, and mint to a large mixing bowl.
- In a small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper.
- Drizzle the dressing over the salad.
- Gently toss until the ingredients are lightly coated.
- Sprinkle the crumbled feta over the top and fold once or twice very gently.
- Serve immediately while cold and fresh.
Notes
- Use chilled watermelon for the freshest texture.
- Add feta last so it stays creamy and does not break down too much.
- Dress the salad right before serving to prevent extra liquid from collecting in the bowl.
- Store leftovers in the refrigerator for up to 24 hours.
