Description

  • 1 pound beef chuck or stew meat, cut into bite-sized pieces
  • 3 medium zucchini, sliced into thick rounds
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon ground cumin
  • Pinch of cinnamon (optional)


Instructions

  1. Preheat Your Equipment: Set a large pot or Dutch oven over medium-high heat until hot.
  2. Combine Ingredients: Add olive oil and brown the beef until golden. Remove and set aside.
  3. Prepare Your Cooking Vessel: In the same pot, sauté onions until soft. Add garlic and cook for 1 minute.
  4. Assemble the Dish: Return beef to pot. Stir in tomato paste, salt, pepper, cumin, and cinnamon.
